  • 6 tomatoes
  • 1 onion
  • 1 cucumber
  • 1 garlic clove
  • 1 celery stalk
  • 1 tablespoon of fresh chopped parsley
  • 1 spoonful of chopped tarragon

Instructions
  1. Wash all the vegetables without peeling them.

  2. Scald the tomatoes to peel and deseed them.

  3. Using a food processor, blend four tomatoes, half of the cucumber, bell pepper, and onion, along with the minced garlic, parsley, and tarragon until it forms a smooth puree.

  4. Add one liter of water and season with pepper.

  5. Place in the refrigerator for two or three hours.

  6. Cut the remaining vegetables into cubes and present them separately in small bowls.
