  • 300 grams green beans
  • 4 carrots
  • 3 zucchini
  • 3 tomatoes
  • 3 cloves of garlic
  • 1 handful of fresh basil
  • 1 tablespoon of olive oil
  • 100 grams of grated tomme cheese with 20% fat content
  • Pepper
Instructions
  1. Clean the green beans by removing the strings and trimming the ends.

  2. Wash and brush the carrots and zucchini and cut them into slices.

  3. Blanch the tomatoes to peel and seed them. Chop them and cook everything in two liters of peppered water for forty minutes.

  4. Meanwhile, crush the peeled garlic cloves in a mortar with a good handful of fresh basil leaves.

  5. Add a tablespoon of olive oil and mix, gradually incorporating the grated cheese.

  6. Before serving the soup, mix in this “pistou” preparation by stirring.
