  • 50 grams carob powder
  • 50 grams textured soy protein
  • 50 soy flour
  • 1 spoon of plant-based margarine (e.g., Earth Balance)-
  • 1 teaspoon of artificial sweetener
  • 1 teaspoon of decaffeinated instant coffee
  • For the orange mousse filling:
  • 1 orange zest
  • 1/2 glass of orange blossom water
  • 2 egg whites
  • 1/2 pot of low-fat yogurt
  • 100 grams fat-free white cheese
  • 3 gelatin leaves
  • 1/2 teaspoon of artificial sweetener (e.g., Stevia)
Instructions
    Cake:
  1. Separate the egg whites from the yolks.

  2. Beat the yolks with yogurt, plant-based margarine, and artificial sweetener, in a double boiler, to produce a foamy mixture.

  3. Grind the textured soy protein into fine powder like flour and mix them in a bowl with carob and flour.

  4. Beat the egg whites until stiff peaks form.

  5. Dissolve the coffee in half a glass of water and mix it with the egg yolks.

  6. Gradually incorporate the mixture of flours and egg whites.

  7. Pour into a high-sided Tefal cake pan and bake in a medium oven (thermostat 6) for 45 minutes.

  8. Let it cool. Unmold and cut in half horizontally.

  9. Orange Mousse Filling:
  10. Dissolve the gelatin in orange blossom water.

  11. Add the grated zest, yogurt, cheese, and artificial sweetener.

  12. When the gelatin starts to set, gently fold in the beaten egg whites.

  13. Assembly:
  14. Place the first cake layer on a plate and surround it with the edges of the mold or a strip of thin cardboard 5 cm high.

  15. Pour half of the orange mousse.

  16. Place the second cake layer and finish with a layer of mousse.

  17. Decorate with orange zest and refrigerate for 2 hours.

  18. To serve, carefully remove the edges of the mold or the cardboard strip.
