Ingredients

  • 200 grams of textured soy proteins
  • 50 grams of wheat bran
  • 100 grams of whole wheat flour
  • Baker’s yeast
  • 1/2 liter of mineral water
  • 1 spoon of St-Hubert 41
  • 1 teaspoon of sugar
Instructions
  1. Mix yeast, a tablespoon of powdered sugar, and half a liter of water in a bowl, then place in a warm location.

  2. Grind soy protein in the blender, making it into a fine powder similar to flour.

  3. Add St-Hubert, flour, and wheat bran. When it foams like beer (takes about 20 minutes), add the yeast.

  4. You need to achieve a dough with an elastic consistency that can be easily worked.

  5. Knead for 5 minutes on a floured board, stretching the dough, folding it onto itself, and making it describe a quarter circle with each kneading turn.

  6. Put it back in a bowl, cover with a damp cloth, and place in a warm location for about 3/4 of an hour, so that the dough increases by at least one-third of its volume.

  7. Put it back on the floured board.

  8. Give it two or three kneading turns, then divide into four and shape each piece into a baguette.

  9. Arrange on the floured baking sheet. Make two or three incisions on the top of each bread.

  10. Cover with a plastic bag and place back in a warm location for half an hour, until the baguettes double in size.

  11. Do not wait too long because thedough would collapse during cooking.

  12. Meanwhile, preheat the oven to thermostat 6 and place the bread in it for about 45 minutes until they are golden brown.

  13. Do not open the oven door during baking, as the temperature must remain constant, at least during the first half of the baking time.

  14. Take out of the oven. Gently detach the baguettes without breaking them and let them cool on a rack.
